Kluai Buat Chee - ' Bananas in Coconut Milk ' - กล้วยบวชชี

One of my all-time favourite desserts, was sweet, creamy, 'Kluai Buat Chee' - กล้วยบวชชี - Bananas in Coconut Milk.

Serving: - 3 - 4 people

10 x medium sized Bananas (*Kluai-nam-wa )(see: Note below)
250 mls x Coconut Milk
1½ cups x White Sugar ( I would see no problem with Raw Sugar, or LoGiCane Sugar )
1 tsp x Salt
1 cup x Water

Fill a pot with enough water to cover the bananas and boil for 20 minutes, which still have the skins ON!
Drain, then peel and slice each banana into 4 (or more) pieces - length-wise and then across.
Add the 1 cup of Water and ¼ of the Coconut Milk together, to the pot, and re-introduce the bananas. Slowly bring this to the boil.

Then, add the Sugar and the remainder of the Coconut Milk, and bring back to the boil.

Can be served with ice cream, but is absolutely delicious by itself.

* Note:
Kluai Nam Wa is a sticky and sweet variety of Thai banana, when ripe. It is valued for its high nutritional value. It is a key ingredient of steamed desserts made with glutinous rice, or rice flour, such as in Khao Tom Mut, or Khanom Kluai.
